Fluffy Bhaturas
Statutory Warning - I am no great a Chef nor do have excellent taste buds. I am posting it out of my sheer love for food and a passion for cooking instilled lately.
Chole Bhaturas is not an alien term for any North Indian. In Bangalore, you will get Dosas, Idlis and Rice in every nook and corner, but not a trace of the famous Chola Kulchas of Delhi or the fluffy Bhaturas. I tried Bhaturas in a Bangalore Mall and cursed the guy for bringing a bad name to such a delicacy. Stand by a Kadhai Wala in Delhi and see how beautifully they do that thapli thing and make such fine bhatura rotis with their hands before putting it into the big iron kadhai!
So i felt like making Bhaturas. The fluffy ones. I searched for some recipes, got 2-3 , mixed them and tried. Turned out well. So thought of sharing.

Ingredients
- 4 cup Maida
- 1 cup Sooji
- 1/4 tsp Baking Soda
- 1/4 tsp Sodium Bicarbonate
- 1/2 tsp Sugar
- 1 cup curd
- 1 tsp oil
- Warm Water
- 1/2 tsp salt (or as per your taste)
- Oil for Frying
Method:
- First sieve the Sooji and Maida.
- Add salt, sugar, sodium bicarbonate and baking soda. mix well.
- Add curd. Mix till curd gets absorbed in the flour.
- Now make a dough with warm water.
- Once dough is firmly done, add 1 tsp oil and grease it. Keep the dough for good 8 hours.
Patience will pay you with great taste :) Then make small balls, grease them with oil and keep for another 10 mins.
